Gluten-Free Breakfast

A favorite in our house are belgian waffles made using Pamela’s Products Baking and Pancake Mix.  I have been using this mix ever since Casey first got diagnosed with Celiac disease.  It makes wonderful waffles as you can see in the image below.

Casey asked me for blueberry pancakes yesterday and I figured I would give Pamela’s mix a try and see how the pancakes would turn out.  The batter was just like real pancake batter, the batter baked up just like real pancake batter, and most importantly, they sure tasted like real pancakes!  Enjoy the photos and be sure to try out this mix for your gluten-free loved ones.

    Do you follow the recipe on the package or adapt it to fit your tastes? I appreciated your input at last nights meeting.

    I usually go by the recipe on the package for Pamela’s product mixes. I have been known to sub apple sauce for the oil from time to time, makes the waffle recipe a little more moist. I am so glad that I could attend the meeting, thanks. Like I said, I will make something yummy to bring for the next meeting.

    I love Pamela’s Baking and Pancake mix! I have always made either pancakes or cookies with the mix but I had never tried to make waffles with them. I have not found any good pre-made waffles in the grocery stores (always kind of soggy I found). Waffles sound really good… guess Im going to need a waffle maker :)

    Yes, the waffles using Pamela’s Baking and Pancake Mix are quite delicious. I haven’t found any pre-made waffles either, most taste bad. I just bought a new waffle iron, Waring Pro from Bed Bath and Beyond; its kinda pricey, but it does an excellent job.
